So most people who know me know that I love to cook and usually make something from scratch every night. You may be thinking, “If Estela is writing a recipe of the week blog, it is going to be full of crazy ingredients, and probably complicated.” Well I am here to tell you…YES, I will probably have some things in my recipes that you have never cooked with before. And YES, I will stretch your culinary talents a bit… but have no fear I promise that everything is kid tested and family approved. Also I promise to have plenty of recipes that are easy and no brainers!
Healing Diet Chicken Salad
Chicken Salad, a classic and great for all seasons. The best thing about making a healing diet Chicken Salad is that if you start from scratch you can do so much from one whole chicken. This is one of our family favorites! I usually make it on Sunday’s and it can last most of the week (well at least that is my intention however it is devoured in the first few days!).
I always start with a whole organic chicken and roast it with lemon, garlic and a few seasonings. Once cooked I pull the chicken off the bone they can be used to make a great broth or soup! If you don’t have time or the means to used a fresh organic chicken you can use a whole rotisserie chicken (just check the ingredients and try to find a natural or organic chicken, avoid any chicken made cooked with chemicals and sugars).
If you have never made chicken salad be adventurous this week and if have made chicken salad but not this one… try something new! I like mine hearty and with big chunks you may like yours more finely chopped which ever way you like it… ENJOY!
Healing Diet Chicken Salad
3-4 cups cooked Chicken (free-range or organic)
2-3 cups diced celery (always use organic as it is one of the dirty dozen)
2 Tbsp chopped green onions
1 Tbsp lemon juice
2/3 cup Vegenaise with grapeseed oil (purple top)
1/4 cup pecans, coarsely chopped
1/4 tsp sea salt
1/4 tsp dill (optional)
pepper to taste
In a large bowl mix all ingredients together until combined.
To serve as a salad refrigerate or serve immediately on lettuce greens.
I use (Grapeseed Oil) Vegenaise instead of regular mayonnaise. This can be found in the dairy cooler section at Earthfare, Whole Foods and even some local grocery stores.
