Do you love chocolate and peanut butter? This is the perfect healthy dessert for you!
One of the biggest hurdles that most people face when they begin to eat a healthier diet is satisfying that “sweet tooth”. Sure there are lots of “healthy” desserts on the market but most come in a box and made with artificial sweeteners and colors. They may be low on sugar but loaded with other harmful ingredients.
These peanut butter cups are perfect for satisfying that chocolate craving.
- 4 oz Raw butter (use organic if raw is unavailable)
- 1/4 cup cocoa powder
- 2 teaspoons stevia
- 1/2 cup xylitol
- 1/2 teaspoons sea salt
- 1/2 cup Valencia peanut butter (Organic is better)
Peanut Butter Filling
- 1/4 cup egg protein powder
- 1/8 teaspoon sea salt
- 1 1/2 teaspoon stevia
- 2 tablespoons xylitol
- 1/2 cup Valencia peanut butter
- 2 tablespoons raw butter, softened
For the Peanut butter Filling: Combine egg powder, salt, stevia andn xylitol. In a separte bowl mix peanut butter and butter together. Mix in dry ingredients.
For the Chocolate: In a saucepan over low heat, melt butter. Add cocoa, stevia, xylitol, and salt. Mix well. Add peanut butter. Mix well. Remove from heat. Spoon enough chocolate to cover the bottom of a cupcake paper. Put the peanut butter on top. Cover peanut butter with chocolate. Freeze until solid. Must be refrigerated, they melt fast!
